Michael’s Donuts

Donut Method:

Preheat the oven to 350 degrees and spray 2 doughnut pans well.

Sift the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.

Spoon the batter into the baking pans, filling each approximately three-quarters full. Bake for 17 minutes or until a toothpick comes out clean. Cool for 5 minutes, then remove.

Donut Ingredients:
2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 extra-large egg, lightly beaten
1 1/4 cups whole milk
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract

Glaze Method:

Heat butter, milk, glucose, and vanilla in medium saucepan over medium heat until butter is melted. Decrease the heat to low, add chocolate, and whisk until melted. Turn off heat, sift in the powdered sugar, and whisk until smooth. Place the mixture over a bowl of warm water and dip doughnuts immediately. Allow glaze to set for 30 minutes before serving.

Glaze Ingredients:
1/2 cup unsalted butter
1/4 cup whole milk, warmed
1 tablespoon glucose
2 teaspoons vanilla extract
110g bittersweet chocolate, chopped
2 cups icing sugar
